Gluten Free? No problem!

It is Father’s Day! and to mark the occasion, we tried another gluten-free recipe. We are doing more and more GF recipe testing/tasting and enjoy every new discovery on this remarkable road. Vanessa and I are meeting more people in the shop who are gluten-free and who happily share tips, advice and taste-testing with us.
This morning I made gluten-free waffles for breakfast. They were so easy and delicious. We ate all 8+ of them, just the two of us as the kids are away. A couple we had with maple syrup. Some with my husband’s mom’s homemade cherry compote and prune jam. And we can’t forget the local chocolate pasta from Chocolaterie Atelier Alexandre (which you will soon find in the shop).

This GF waffle recipe was shared with us by Eva Veldhoen who is busy creating fabulous gluten-free muffins soon to be seen around Amsterdam.

Gluten Free Waffle recipe (flours can be found at Eko Plaza)
100 grams rice or buckwheat flour (I used buckwheat)
100 grams teff flour
100 ml carbonated water
300 ml yogurt
2 eggs
pinch salt
just mix together and go for it!
Enjoy!

I also added a half teaspoon of xantham gum (a binding agent) as I like how it makes gluten-free flours/recipes bind and become less crumbly. You may choose to add or not.

Thank you, Eva, for this fantastic recipe! I cannot wait to make it again for my daughters, too! I think it will become a staple in this house. :)

Net terug van een heerlijk weekendje Londen.
Daar heb ik een paar cupcake/taart “Bakeries”bezocht.
Onder andere Peggy Porschen Bakery,daar hebben we (mijn man Bertrand en ik)
een heerlijke Banoffee cupcake en een gluten en lactose vrije Blueberry muffin gegeten. Ik heb daar ook 2 mooie boeken,cookie cutters en cupcake cups gekocht. Het team van Peggy Porschen heeft een lieve boodschap in de boeken geschreven. Een van deze boeken zullen we via een leuke actie weggeven en de andere zullen we in onze winkel verkopen. Ook hebben we cupcakes geproefd bij de Hummingbird Bakery en The Cupcake Bakehouse. De cupcakes hier waren zeker ook erg lekker maar voor ons stak Peggy Porschen erboven uit. Gluten-Free…

So, we have just found out that my daughter is Celiac, or allergic to gluten. Vanessa and I have already been interested in baking gluten-free and have started with some recipes, so far we have had a great response. Vanessa is now following a gluten-free diet and we are both busy combining different flours to come up with some nice sweets for those who cannot eat gluten. Now that my daughter has been diagnosed with this disease, we will be doing more and more to learn and bring you delicious gluten-free treats. If you have experience with this, feel free to share any tips and ideas with us. You may also bring up these ideas on our Facebook page so that everyone has a chance to learn about it as well.

My Intro to Bergamot…

This weekend my husband brought home from his restaurant a fruit that looked something like a grapefruit but smaller. I smelled it and still could not place it. What he brought home was a bergamot orange. Perhaps you are quite familiar with this but I had never thought of bergamot beyond the essential oil and Earl Grey tea, never.

Upon realizing that bergamot is a citrus fruit I became incredibly curious and wondered how I could use it in the bakery. I decided to make lemon cupcakes and frost theme with swiss merengue bergamot buttercream, hmmmmmm. As I grated the bergamot zest, the familiar aroma filled the kitchen, it was extraordinary. As I had just one, I paired it with lemon zest and a bit of lemon juice as well. It is quite delicious, but next time I will make sure I have more bergamot oranges. So, this is quite a treat in the shop this week. Stop in if you can, it is worth it.

And just for fun…I had extra lemon/bergamot juice and decided to make a bergamot- lemon-ade. I sweetened it with a bit of Stevia. It was so unique and delicious. If you can find bergamot orange, I highly recommend it! (ours came from Lindenhoff.) I am sure it also makes for a delicious cocktail, too! For further reading please see… Bergamot Orange.

 

 

Valentine’s Day 2013 and other news :)

Sooooo, here I am at my desk bending my mind around Mail Chimp to create a fun and interesting newsletter, I realize that it will take longer than I expected  - I am not so techy – probably March then… so I have jumped on over to the blog spot so that I can share with you here what is going on in the shop and bakery…

January 2013 Newsletter…

HELLO AND HAPPY NEW YEAR!!!

We are welcoming 2013 with a lot of ideas for our new endeavor, The Mad Bakers’ Shop. For those of you who are unaware, we took over De Tafel van 18 of Petra Achtien on October 9, 2012. At that time, Vanessa and I were celebrating our 2 years of baking together and delivering all around Amsterdam and the Netherlands. The opportunity to take over this wonderful shop seemed to just fall from the sky, we are still pinching ourselves!

NATURALLY… As we strive to continue the shop with all of the items you expect and depend on, we are very excited about some new ideas as well. We are now ordering natural colorings and will soon carry naturally colored marzipan. We will continue to look for more and more naturally flavored and colored items as well. We are searching for a variety of gluten-free flours to create a gluten-free flour section. To start off this new section, we now carry xanthan gum!

WORKSHOPS!  We love giving workshops! At the moment we are planning two per month in the shop. You may also request private workshops for a variety of occasions such as baby shower, bridal shower, birthday or as a team building exercise for a business. Every month we will give the next two months dates for workshops that are held in the shop or our kitchen. Click for Workshop descriptions and info.

January 17, Thursday – 1 to 3:30pm: Cupcake Workshop, 35 euros p.p.
January 19, Saturday – 11 to 3pm: Tiered (stapeltaart) Cake Workshop, 75 euros p.p.
February 7, Thursday – 1 to 3:30pm: Cupcake Workshop, 35 euros p.p.
February 23, Saturday – 11 to 2pm: Single(basistaart) Cake Workshop, 50 euros p.p.

JANUARY CUPCAKE SPECIAL – Ferrero Rocher bon bon chocolate cupcakes with vanilla buttercream and a chocolate drizzle…. a dozen for 24 euros. Please order with a minimum 2 day notice.

Hallo en gelukkig nieuwjaar!!

Wij verwelkomen 2013 met super veel ideën voor onze nieuwe onderneming: The Mad Bakers’ Shop. Voor degenen die het nog niet wisten: Wij hebben “De Tafel van 18“ overgenomen van Petra Achtien in oktober 2012. In dezelfde periode vierden wij ons 2-jarig bestaan als bakkers van o.a : taarten,cupcakes en koekjes en nog veel meer.. En bezorgden wij overal in Amsterdam en omstreken. De kans die we kregen om deze winkel over te nemen leek als uit de hemel gevallen en hebben we met beide handen aangegerepen.

Natuurlijk:
Wij streven ernaar zoveel mogelijk artikelen in de winkel te blijven verkopen die er voorheen ook al waren. We zijn ook bezig met een aantal nieuwe ideën. We hebben bijvoorbeeld natuurlijke kleurstoffen (naast de reguliere) besteld en binnenkort willen we ook natuurlijk gekleurde marsepein gaan verkopen. We zullen blijven zoeken naar nog meer produkten met natuurlijke kleur en smaak stoffen. We zijn ook op zoek naar diverse soorten glutenvrije bloem zodat we een aparte afdeling daarvoor kunnen realiseren in de winkel. En ons eertse item voor de glutenvrije afdeling is: Xantana Gom !!!

Workshops:
Op het moment plannen we 2 workshops per maand in de winkel. Je kunt je ook inschrijven voor een privé workshop met een groepje voor verschillende gelegenheden zoals een: babyshower,vrijgezellen feestje of als een teambuilding oefening voor bedrijven. Elke maand zullen we de workshop data geven voor de aankomende 2 maanden. Deze worden gegeven in onze winkel of keuken. Klik hier voor onze workshop omschrijving.

On to the New Year! 2013!

December 29th, 2012

We have lots in store for the New Year!

First, we are open on Sunday, Dec 30th, the last Sunday of the year from 12 to 5pm. We will have all of our Christmas items on sale at a 25% discount till the end of the week, Saturday, January 5th. We have cookie cutters and pans, plunge cutters, cupcake cups, cupcake stands, chocolate molds and decorations.

We will re-open in the New Year 2013 on Wed, January 2nd at 10am, resuming our regular hours Tuesday to Saturday from 10 to 5pm.

We are so exited to be opening The Mad Bakers’ Shop on Tuesday, Oct 9. 10:30 to 5:30. Located at Haarlemmerdijk 97. We are taking over the wonderful shop De Tafel van 18. You will be able to continue getting your baking supplies here just as before with the added element of our delicious cupcakes and cookies, soon cakes and other goodies on the menu as well. You may also make your bakery orders and pick-ups here. We look forward to seeing you in our new shop!

We have added two Custom Cakes to our Standard Cake menu!!!

We have created two custom cakes for children’s birthdays that are priced at €45 complete with decoration, message and your chosen color scheme. These cakes are for up to 20 persons. The princess cake is made with a real Disney Princess Barbie and comes complete with full body and accessories.

Cupcake Workshop Birthday Party

Great work1We had such a great time with Eva and her friends for her birthday party cupcake workshop! We got together at 10am on Saturday to create cupcakes with the theme “Fashionista.”  They colored their own marzipan, made “Chanel” bags, ribbons and bows, textured and made fondant discs, practiced piping techniques with different icing tips and even made some cupcakes for Father’s Day. It was a lot of fun to see them creating their own ideas into edible form.

Hello and Welcome!

We are so excited to welcome you to our new website! Here we finally have our “shop” with a real webshop coming soon. We invite you to take a tour and see what we are up to such as on our gluten-free and vegan page. If you have any ideas for things you would like to see here that are gluten-free and/or vegan, please let us know.

With summer finally here we are now adding strawberry to our cake, cupcake and cake-pop menu. It is delicious!

Also, June 15th is English Muffin Day!

To celebrate our new website, we are offering free delivery in Amsterdam* for the entire month on June!  Yea! We look forward to hearing from you. (*Amsterdam Centrum, West, Oost and Zuid.)
